
About Our Thesis
The academic work behind Atlas Alimenta endeavors to build a repository of preservation practices across the globe. We are identifying industry experts in each country—all 195 of them!—to document, examine and share traditional methods. By consolidating data—specifically, the history, science and culture of preservation—we believe we can enhance food safety and improve nutrition—across borders, across cultures.

We are looking for food historians and culinary illustrators, food scientists and microbiologists, as well as value-added producers, food safety experts and food policy advisors. Are you an older generation cook or a hipster fermentation specialist? We want to hear from you, too!
Soon we will have a secure portal where we can share ideas and track information. The low-risk methods will reside in an open source database—to be shared with our readership at a later date.
